When we started roasting in 2013, we had a small 1 kg machine that had us roasting for twelve to fourteen hours straight on most nights because of how small it was. Though we have grown, both, the size of the roasters (we now roast on two 12 kgs Probat machines) and the team, we continue to spend as much time, energy and resources on constantly pushing our roasting quality forward.
We are consistently researching, testing and implementing best practices throughout our business to raise the bar. Cupping hundreds of green bean samples every harvest before making our final selections is standard procedure at Blue Tokai Coffee Roasters. Holding advanced sensory trainings for junior roasters, and experimenting with processing at the farm level are just some of the ways that our highly skilled team is constantly evolving.
Although we have a dedicated sourcing team for green beans and have invested in establishing quality roasting parameters, we know that a lot more steps still have to fall into place to brew a good cup. This is why we have worked closely with our Q Grade certified Director of Coffee to create industry leading procedures such as cupping every single batch that is roasted to ensure consistent quality.
Our belief in transparency extends to our roasteries in Mumbai and Delhi and we encourage our customers to visit us. The large windows in our roastery were designed for you to observe our coffee roasters at work while you sip our special house blends in the attached café. To take the interaction with your coffee a level further, we’ll be running on-going tours of the roastery. We roast from Monday to Friday and look forward to having you drop in to see your some of your favourite beans being roasted.

Each sachet contains a filter that is filled with ground coffee from our partner farms, which is nitrogen-flushed and sealed to preserve freshness.
Place the filter on your cup using the side anchors to hold it in place. Slowly fill the filter two to three times to make yourself great-tasting coffee, without any compromise on quality!

Our single serve sachets are designed to help you make a great tasting cup of coffee without any equipment. Simply place the filter on your cup using the side anchors to hold it in place and slowly pour hot water to fill your sachet no more than 3 times, stopping to ensure the water doesn’t run over. Let the coffee drip through the filter into the cup and enjoy!
Start by pouring a little bit of hot water into the filter to moisten the coffee and to let it bloom. Wait for 20 seconds and then pour water so that it fills the whole pouch. Repeat this two or three times. While pouring, you can pause for a few seconds to ensure the filter doesn’t run over. You can try pouring more or less water to adjust the taste as per your preference. If your coffee is tasting sour, it is under extracted so use more water next time or increase the steep time. If your coffee is too bitter, it is over extracted and you can add less water to it or decrease the steep time.
You can let the coffee steep for a few seconds before you discard your sachet. If you’d like more flavour extraction, you can keep the filter in longer.
Yes, we have used the same coffee from our partner farms as we retail in full-size packs. We offer 4 single estates for Easy Pour - from light roast from Nachammai Estate, dark roast from Thogarihunkal Estate, medium dark roast from Attikan Estate to dark vienna roast, we have something for each palate. The roasting profiles for the coffee that goes into these sachets is exactly the same as that for our larger size pouches. All the coffee is roasted 3 days prior to packaging and then nitrogen-flushed to remove the oxygen and preserve freshness upto 6 months.

No. Each filter is designed to be a single serve that brews one cup of coffee.
Nitrogen flushing is a technique used in food packaging that removes the oxygen from the pack to prevent oxidation and degradation. By using this method we are able to increase the longevity of the coffee and preserve freshness for 6 months. Nitrogen is a naturally-occuring, odourless, and food-safe inert gas. It is abundantly present in the atmosphere (we breathe it daily and are doing so right now) and it does not react with the coffee or affect its flavour in any way.
The coffee is roasted 3 days prior to packaging so it has time to degas before we grind and add it to the filters. It is then packed and nitrogen flushed which helps retain the freshness. We recommend storing the sachets in a cool, dry place away from direct sunlight and you can use the coffee upto 6 months from the date of packaging.
The Easy Pour filters are made with a fully biodegradable material. So you can toss the used filters with your wet-waste without any worry.
If you would like to have Easy Pour with milk or sugar, we recommend choosing the Thogarihunkal Estate, Attikan Estate or the Vienna coffees since those are medium, medium dark and dark roasts respectively. The Nachammai Estate is a light roast and we recommend having it black, without any milk and sugar, to fully enjoy the delicate flavours of this coffee.
